Happy Nesting

I make a pretty mean banana bread and decided to bake one as a house warming gift. I wrapped it in a cute, 49¢ Ikea dish cloth. Pretty and practical, what could be better?

I spice mine up with cinnamon, ginger and ground cloves. I also use sour cream to make it extra moist. I recommend it warm with butter or if you have it, lemon curd!

You will need:
Four very ripe bananas
1.5 cups flour
1/2 cup sugar (you can add more if you like it really sweet)
1/2 cup sour cream
1 egg
1 tsp baking soda
1/2 tsp salt
1/4 stick butter softened
1 tsp vanilla

(optional spices)
1 tbls cinnamon
1/4 tsp ginger
1/4 tsp ground cloves

Preheat oven to 350º and grease the inside of your bread pan (I use a little of the butter before I soften it in the microwave)… In large bowl, mash the bananas then add all the other ingredients and use a hand mixer to combine. Pour into bread pan and back for about 40 to 55 minutes (till tooth pick comes out clean. Easy and good!

I made this last night... I only had two bananas, so I threw in a couple of handfuls of chopped dried apricots, too, and used nutmeg in lieu of ginger, which I was also missing. Delicious! The sour cream makes it dense and moist. Mine didn't rise nearly as much as yours, though.
