Pie on Pie!
Yesterday, a rainy Saturday afternoon, I decided to try a recipe I saw in Martha Stewart Living for a Raspberry Custard Pie. I am a big custard fan, and so when I saw this, I knew I had to try it out. I did make some minor modifications... the main one being, I used less raspberries (just two small cartons), more eggs (3 instead of one), less cream (1/2 a cup instead of a full) and I also added vanilla and nutmeg. Oh, and I used a Trader Joe's pre-made crust, just for the ease of it.
I love the final pie, a wonderful mix of tart berries and sweet custard. It was easy to make, I think next time I will use the same number of eggs but the full amount of cream. I may try it with a jar of dark morello cherries I have, also from TJ's.
