Mom's Fried Mac & Cheese

Once upon a time when we were young and money was tight, my Mother often cooked up a family favorite out of sheer necessity. Imagine it is time for breakfast and you have four hungry faces starring at you and all you have on hand is some leftover mac & cheese, a little butter and a frying pan.

 My Mom does make pretty amazing mac & cheese and it does help to start with a good version of this. Here is her easy recipe... In a sauce pan mix a 2.5 cups of sharp or extra sharp chedder cheese or both chunked, 2 tbls of flour, two cups of milk and some ground pepper. Cook till melted and well blended. Pour over a box of cooked (al dente) & drained elbow macaroni, in a large baking dish, layer slices of cheese on top and bake at 350º for about 45 minutes.

Take your leftover, cold from the fridge and fry it in lots of butter till slightly crispy and serve! I consider this a breakfast meal since that is always when we had it. I am sure it would work well though any time of day. Especially good for a hangover, Happy New Year!

OMG...this looks so yummy! Mac & Cheese is the ultimate comfort food. Hmmm, maybe that's what I should whip up for dinner on this cold and dreary day. I feel bad for the people who are probably already lined up for NYE in Times Square!

This sounds so yummy. But I'm just wondering - how much is a 'box' of noodles? Sixteen ounces? I've really only seen elbow noodles in like Kraft mac'n'cheese boxes or in bags with the other noodles.... I don't want to be short on noodles! :)

My Mom is not a "measurer" she just said a "package". I am pretty sure I have seen it sold in boxes, along side other pastas...which should be plenty. A bag should work also...!

16 ounces is fine for this recipe but if you want a "moister" mac & cheese, then I'd probably go with 12 ounces or up the wet ingredients a tad. I like mine on the drier side and used a full box of corkscrew macaroni.

BTW Lara...tried the fried version...OMG again! It is so darn yummy!

wow, never had mac and cheese as breakfast and never fried. How many wonderful and delicious things I need to learn?.
