Easy Peasy

This tasty Indian Eggplant soup is super easy to whip up. All you need is a good tomato soup, I used Campbell's V8 Tomato & Herb that comes in a carton, a package of punjab eggplant from Trader Joe's (no TJ's near you, I found this version by Tasty Bite). Just combine and bring slowly to a simmering boil and season to taste. A nice spicy twist on traditional tomato soup. I like it served with a sprinkled of crumbled goat cheese.

Now I have to say, and it's a bit of a guilty confession, THAT'S my kind of cooking. Don't get me started on what I do for kids birthday cakes. I will admit, I am one mean assembler of things.

I am all about assembling! The cool thing is it taste like it took hours and I think would be a great and impressive first course for a dinner party. No one need know!
