Cookie Crush: Rooster 14

Rooster 14 is the brain child of make up artist turnedcaterer, Nancy Portaleo. Her unique chocolate chip cookies became the most requested item on her dessert list. Word of mouth was so strong, even new clients would call up and say, "Oh, we want those cookies." 

I love these cookies so much I gave boxes of them out to clients last Christmas. To reinvent a classic cookie is no small feat, so Nancy keeps her recipe under lock and key. She did allow me to watch her process, which takes place in a converted space in her basement.

 After combining the ingredients with a giant mixer she uses an ice cream scoop to create her signature dome shape. The cookies have a distinctive salty-ness, which combined with the sweet is just so good! I got to try a warm one right out of the oven, which was amazing. Heating them in my microwave for about 30 secs also gives them the "out of the oven" taste.

Nancy's daughter Juno is her lucky in-house taste tester.

Mmmm... sweet and salty. There is probably nothing I love better than chocolate-covered salted almonds, especially if said chocolate is dark. So delicious!

The new pretzel m&ms are currently my favorite salty/sweet taste. They've been sold out around here for awhile, my fiance and I had to go to 7 different stores to find them! They're only 150 calories a pack which is a plus.

I just love to eat those chinese ready-made noodles (Yum-Yum shrimp flavour) with cashews and raisins. Everyone else says it sucks, but I just looooove this combo.

pretzel rods used as a "spoon" for ice cream or chocolate frosting. Good Lord, it's fantastic!

Mmm...your cookies look delicious and I love their unique shape! My favorite sweet and salty snacks are white chocolate-covered pretzels and haystacks - crunchy Chinese noodles and peanuts covered in melted butterscotch chips. Yum!

Bacon dipped in chocolate fondue is a favorite as well as Fleur de Sel Almond Toffee (homemade almond toffee, bittersweet chocolate, sprinkled with sea salt-- I made mounds of it for Christmas co-worker gifts and people were fighting each other for the crumbs!)

I love chocolate covered pretzels and of course, fresh hot Kettle corn. And it has to be fresh. So, any street fair or outside event I hear about, my first thought is there better be kettle corn there!

My favorite salty/sweet combo goes back to my childhood: bacon with a maple syrup glaze.

When I was a little girl, my mom worked full-time (this was back in the days when that was still a novelty). Sometimes, on weekends she would make a pancakes from scratch with a side of tasty slab bacon. Ahhh, a piece of buttery pancake and salty smoked bacon drizzled with real maple syrup = Yummy!

When I grew up and became a foodie, I wanted to find a way to recapture that flavor and make it a bit more upscale so I went to work until I hit on a way to make it work:

Mix 1/4 cup of real maple syrup (grade B if you can get it, it's darker and richer than grad A), a tablespoon of molasses and 1/8-/1-4 teaspoon of real vanilla.

Broil some thick cut bacon until it is cooked but pale and still floppy. take it out and blot any extra grease off

Brush the syrup mixture on one side of the bacon and put it under the broiler for a about a minute; slip the bacon over and brush the other side with the syrup mixture and put it back under the broiler.

Serve any remaining syrup mixture with pancakes or waffles. This bacon with pecan and/or blueberry pancakes and waffles.

i loove chocolate covered peanuts. buying a box of goobers at the movies is perfect for me. i love the small crunch and then the nutty taste of a peanut with smooth chocolate. mmhmm!!
